Almond & coconut biscuits

No added sugar, no flour… Only good and healthy stuff. That’s what these almond & coconut biscuits with chocolate chips are. The right “power snack”, which supplies you with energy necessary for all activities throughout your day.


1 cup ground almonds

1 cup grated coconut

3 tbsp coconut oil

3 tbsp honey

1 tbsp almond butter

1 egg

approx. 50 g chocolate chips

Mix ground almonds with grated coconut, then add all remaining ingredients, so coconut oil, honey, egg and almond butter.

Work a dough, which will be a little sticky.


Using a measuring cup or a a spoon, take a part of the dough (I used one spoonful) and form the biscuit with wet hands, right onto the baking pan lined with baking paper. The dough won’t stick to wet fingers :-).


Bake the biscuits for 10 minutes at 170 degrees.

These biscuits are so easy to make, that you can make them even in the morning before leaving to work and pack them into your kid’s lunch boxes (or yours as well). :-)

Sometimes I use chopped dark chocolate instead of chocolate chips, or I don’t put the chocolate into the dough, but just after baking, I pour some chocolate over the biscuits, or I dip them into some.

If I bake them for kids, I use chocolate candies. Other times I leave the chocolate out, and replace it by chopped almonds.

I used a spoonful as a measure and I made 15 biscuits. If you want to make larger biscuits, don’t forget to adjust the baking time.
