Cheese muffins

Cheese muffins with bacon can easily replace even a roll with salami, which kids get as a snack for school. And for dinner, it will also belong to the main star of the evening.

Ingredients:Serves: 12

2 cups spelt flour

1 tsp baking powder

1 tsp salt

125 g butter

1 egg

3/4 cup full fat milk

1/4 cup oil

approx. 70 g cheddar cheese

125 g bacon or dried ham



Preparation
Steps: 3

Mix flour, baking powder, salt and butter in a food processor with chopper. We need the butter to "crumble" into the flour.

Then add remaining ingredients exept for the bacon and mix again. The bacon mix into the dough manually, with spoon.

Split the dough into muffin holes which we have greased with butter and bake at 190 degrees for about 20 minutes.

You will make 12 muffins from these quantities. If you want to serve these muffins as a snack for a party, I recommend to double the quantities right away.
You can replace cheddar with any other cheese, for example parmesan, emmentaler.. Or add herbs into the dough for a change.
