Cumin bread with beer

Cumin bread with buttermilk and beer is very easy and quick to prepare. You don't need yeast for the preparation, only baking powder and sodium bicarbonate. Buttermilk and beer will take care of the softness and suppleness.


300 g spelt flour

200 g wholemeal spelt flour

2 tsp salt

2 tsp whole cumin

1 tsp baking powder

1 tsp baking soda

60 g butter

2 eggs

150 ml buttermilk

150 ml beer

1 tsp milled cumin

I make the dough in a food processor with a kneading hook. Mix all the dry ingredients first (flour, salt, cumin, baking powder, sodium bicarbonate and sugar) and grated butter. 



In another bowl mix together buttermilk, beer and eggs.


Add the liquid mixture to the dry one and knead the dough.


Place the dough into rectangular loaf pan and bake at preheated oven at 180 degrees for 50 - 60 minutes. Check the bread using skewers.

If the dough seems to be too dry, add more beer. And if too wet, add more flour. Everything depends on the type of flour you use. 

However, the dough for this bread will be a little thinner, so don't put in too much flour.
