Ginger rolls

I assume that you can find vanilla rolls in most households on a holiday table. With us, vanilla rolls have been replaced by ginger rolls, which are a little spicy thanks to candied ginger, and still delicate and soft thanks to ground almonds.


150 g spelt flour

100 g wholemeal spelt flour

100 g ground almonds

80 g cane sugar

50 g honey

200 g butter

zest of 1 orange

pinch of salt

100 g candided ginger

sliced almonds for decoration (not necessary)

Steps: 6


Make a dough from flour, almonds, butter, sugar, honey, and orange zest.


Cut the candied ginger into small pieces and add it to the dough.


Wrap the dough into cling film and put it into fridge for at least half an hour.


When cooled down, split the dough into sections sized approx. like a chestnut (I made about 35pieces).


Form rolls from each section and place them on a baking pan lined with baking paper. If you want to, you can decorate the rolls with sliced almonds and sprinkle with a little cane sugar.


Bake in oven preheated to 180 degrees for 15 minutes, until golden.

The preparation is really easy. My daughter is very happy when she can help me, and then the product becomes even tastier for her :-) And no one even remembers vanilla rolls :-)
