Peel the bananas and mash them in a bowl.
Add all the remaining ingredients - eggs, yogurt, flour with baking powder, ground spelt oats, honey, cinnamon, raisins and oil.
Stir thoroughly and then add chopped walnuts. Put approx. a quarter aside, to use them for sprinkling the top of the bread.
Pour the dough into a loaf pan, which you have lined with baking paper beforehand. Bake the bread at oven preheated to 190 degrees for approx. 45 minutes.
This banana bread is also a great and healthy snack for a picnic or trip. I eat it for breakfast time to time, when I want to start the day with something sweet :-). In that case I spoil myself and put some almond butter on the top.. Yummy! :-P
In my opinion, the most suitable for this bread are walnuts. But raw unpeeled almonds or pecan nuts could do as well.
You might leave the raisins out, or substitute them for different kind of dried fruit.
Certainly use the baking paper, to make sure that the bread will not stick to the loaf pan and you will be able to take it out.
