Clean the carrot and onion, peel and dice.
Heat up one teaspoon of Ghi butter and saute the vegetables on it. Saute for about 5 minutes until the onion and carrot softens a little and until carrot releases the typical orange colour.
Pour over with 1 liter of water and cover with lid, bring to boil and cook for about 30 minutes.
When the carrot softens comletely, season with salt, cumin and ground ginger. Take off the cooker.
Blend with hand blender until smooth.
Put the pot back on the heat, mix one handful of lentil and cook on low heat for about 20 minutes until the lentil is cooked.
Add some salt if necessary and serve.
This is actually it. So easy and so tasty. During these cold days, this kind of soups belong to our favourite meals, which we serve mainly for dinner.
You can add some chopped chilli pepper, if the soup is not meant for children.
