Chocolate mini cupcakes “Suhajdy” belong to traditional Slovak, especially New Year’s Eve treats. We will not delude ourselves – it is not the healthiest kind of food. That’s why I came up with slightly healthier version with no added fat and sugar. I use good quality dark chocolate and I replaced nutty filling with almond butter. And, it tastes just as well – I have it tested on my husband :-)

Chocolate mini cupcakes

Ingredients:

250 g dark chocolate

3 tbsp almond butter

1 tbsp honey

dried fruit or almonds for decorating (not necessary)



Preparation

Melt the chocolate in a water bath.

Sweeten the almond butter with liquid honey. You can add one spoon of Amaretto for stronger taste.

I use aluminium cups, distributed on a baking pan. Put one tsp of melted chocolate on the bottom and let solidify.

4.

When the chocolate cools down, place one tsp of flavoured almond butter on the chocolate, and again cover with chocolate.

5.

If you want to, decorate the cupcakes with dried fruit or almonds.

If you want treat which is also beneficial to your health, use really good quality ingredients. You can find dark chocolate with cane sugar (or with no added sugar). Although it is more expensive, you can use less. You don’t have to make 100 pieces of the mini cupcakes :-)

Almond butter can be found in supermarket with healthy nutrition, I buy it in our market or I order it through the Internet. But be careful – once you taste it, you won’t be able to get rid of it :-) It is versatile, in “sweet” kitchen as well as in “salty” kitchen.
