Cocoa trees are a very nice and effective decoration of Christmas table, even though it is "only" a shortbread with a bit of cocoa.

Ingredients:

230 g spelt flour

20 g cocoa powder

125 g butter

80 g natural cane sugar

2 egg yolks

pinch of salt

black cherry marmalade



Preparation

Put all the ingredients into food processor with a chopper (or do it yourself) and make a dough. I chrush the sugar in a coffee grinder ahead to get powdered sugar.

If the dough seem to you to be too dry, add 1 - 2 tbsp of water. It depends on the flour and cocoa.

Roll the dough and cut out trees. Sprinkle each second tree with sugar sprinkles and squeeze a bit before baking.

4.

Bake at preheated oven at 170 degrees, for about 10 - 13 minutes.

After baking and cooling, put marmalade between each two trees (a tree with sprinkles is on the top).

The trees are great even as biscuits. You don't need to necessarily put marmalade between them. You can decorate it after baking, for example with coloured topping or melted chocolate.
