You will be surprised, just how simple it is to make these fancy cups. Crunchy filo dough, curd-yogurt filling and fresh fruit will make a great treat. :-)

Filo cups

Filo dough

250 g soft quark (or creme cheese)

125 g butter

150 g white yogurt

2 tbsp. lemon curd

2 tbsp maple syrup (or runny honey)

fruit for decoration

Steps: 6

At first, let the dough defrost in the fridge overnight (if you have forzen one). After defrosting, spread it over your kitchen counter and cut into 8 squares (approx. 11 x 11 cm).

Melt the butter in a pot and prepare muffin baking pan.

I used 3 layers of dough for 1 cup (3 squares). Glaze each of the dough squares with melted butter before you place it into the muffin cup. This will guarantee that the dough won't dry up and will be crunchy.

Bake the cups at oven preheated to 200 degrees for about 10 minutes. We have to watch over it, to prevent it from burning.

Once it's done, fill each one with cream yogurt filling and decorate with fresh fruit.

The filling is so easy to prepare - mix together the quark (creme cheese), white yogurt, lemon curd and maple syrup until smooth.

I buy Filo dough and lemon curd in M&S. From one 270 g pack of dough you will make 16 cups.
