Grate the marzipan into a bowl on a rough grater.
Then add egg white, ground almonds, sweet potato purée, amaranth and almond flour and ground ginger to the marzipan. Mix it together into a dough and let it cool about an hour in the fridge.
Form small balls from the cooled dough. Every ball decorate with three skinless almonds.
Cover the balls with egg yolk and bake in the oven preheated on 170 degrees for about 15 minutes.
From this quantity I managed to make 25 -30 balls. I used a tablespoon as a measure. If I have bigger almonds I will make balls bigger too. I recommend to use the highest quality marzipan you can buy. Only in this way you will have balls with delicious and rich marzipan flavour. I buy marzipan which consist of 50% of almonds and 50% of honey. In this case you have balls with no added sugar but sweet enough. :-)
