Although it may not seem like it, this salmon with vegetable sauce is very quick and full of vegetables. Tasty and healthy. :-)

Salmon with grilled vegetable sauce

for sauce:

1 red onion

1 smaller zucchini

1 red pepper

8 cherry tomatoes

4 cloves garlic

herb salt

approx. 2 tsp olive oil

approx. 1 tsp balsamic vinegar


other ingredients:

salmon

couscous

baby spinach

At first prepare the sauce. Wash the vegetables and cut into smaller pieces. Add whole garlic, nonpeeled. Place the veggies in a baking pan, add some oil and season with herb salt. Mix and put in the oven to grill for about 15 - 20 minutes.

After grilling let the vegetables cool down a bit. Don't forget to peel the garlic now. Put the vegetables into a blender and mix into a sauce. According to your taste, add some more salt, olive oil and balsamic vinegar.

I prepare the salmon in oven as well (I don't need to clean the cooker then). Just drizzle with a little olive oil, add some seasonings and put it under the grill. 10 - 15 minutes should be enough, depending on its size and thickness.

Prepare the couscous according to the directions on a package and stir in spinach leaves.

The vegetable sauce can be used in many other ways. You can make it spicier (by adding chilli sauce or chopped fresh chilli pepper), or mixed toghether with my homemade ketchup, resulting in a dip for not only vegetables, but tortilla chip as well. And healthier version of party food is done. :-) Moreover, I use this sauce with pasta.

For me the best taste with salmon makes couscous. You can choose any other side dish according to your taste. It will taste great with boiled, or baked potatoes, or quinoa, ...
